The Big Broth

Ingredients                                                                                               

§  1 big Onion

§  4 Tomatoes

§  4 big pods of Garlic ( chopped)

§  Ginger (chopped)

§  4 stems of Celery (chopped long)

§  1-2 Carrots (diced)

§  1 Zucchini (diced)

§  2 cups of Mushrooms (diced)

§  2 cups of Spinach (chopped)

§  1 big Potato (diced)

§  1-2 cups of Quinoa (rinsed)

§  1 cup Parsley

§  Salt & Pepper

Directions:

  • In a big pan heat oil ( I used ghee)

  • Fry onions lightly, add garlic and ginger. Fry till onions are golden

  • Add tomatoes and fry till tomatoes dissolve into a paste ( I add a little water to dissolve the tomatoes a bit more)

  • Add the celery and lightly fry it again

  • Add the salt & pepper

  • Add 2 bottles of water and bring the contents to a boil. Let the broth boil for 5 – 15 mins

  • Add carrots, zucchini, mushrooms, potato and the quinoa. Boil it till the quinoa and potato is cooked

  • Add the Spinach at the end. Allow the spinach to cook, giving the broth one last boil

Notes:

1.      You can boil a broth as long as you like. Some people boil broths for hours

2.      You can add beef bones or corn-fed chicken to your broth. Beef and chicken broths can be boiled for up to 12 hours

3.      You can freeze your broths and use them for the future.
